Deep Dish Pizza

If find that the toppings on delivered pizzas are usually not as generous as they should be. If you've ever wanted to make your own deep dish pizza with cheese and toppings of your choice and in the qantity you desire, this is a good recipe to use. This recipe will make two deep dish pizzas with thick crusts, so you won't have to settle for someone else's choice of toppings. You will need a bread machine to make the dough, and two non-stick 9 inch dark cake pans.

Dough:

I use my bread machine on the pizza dough setting to prepare. The ingredients below make enough crust for two pizzas.
  1+3/8 cups lukewarm water
  1.5 tsp salt
  2 TBsp Olive oil
  3+1/8 cups all-purpose flower
  2 tsp sugar
  1 tsp yeast

Use the ingredients above to make the pizza dough using the pizza dough setting of your bread machine. This will mix the dough and let it rise, but will not bake it.

While the bread macgine is working prepare the sauce, cheese and other ingredients per the instructions later in this recipe.

Once the bread machine is done, the dough will still be very wet and sticky (much wetter and stickier than would be the case for a normal pizza dough).

Spread olive oil using a paper towel on the bottom and sides ofr two dark non-stick 9 inch cake pans.

Wet your hands with cold water to keep the dough from sticking. Put half the dough in each pan, then wet your fingers again, and use your fingers to flatten the dough around the bottom of the pan. Be sure to cover the entire bottom of the pan. It is not necessary to form the dough around the sides of the pan.

Sauce for the two pizzas (each will get half of the following):

 8 oz tomatoe sauce
      black pepper to taste
      garlic powder to taste
      itilian herb seasoning to taste
Mix the sauce ingredients.

Cheese for the two pizzas (each will get half of the following):

   1/2 lb whole milk mozerella
   1/2 lb sharp cheddar
   1 tsp  seasoned salt (or more or less to taste)
Grate the cheeses together. Add seasoned salt to the cheese mixture to taste. Preheat the oven to 400 degrees.

Final preparation:

Once the crusts are in the pizza pans, spread half the sauce over each crust. Then in alternating layers, half the cheese, and half the topings for each pizza, then almost the rest of the cheese, and the rest of the topings. Add the small amount of remain cheese over the last layer of toppings.

Cook for approximately 28 minutes.
