Carmelized Shallot Vinaigrette

This Shallot salad dressing starts from carmelized shallot's blended with basalmic vinegar and olive oil.

Ingredients:

3/4 cup Olive Oil
3/16 cup Basalmic vinegar
4 Shallots
1  TBSP Red Wine Vinegar
1/2  tsp Salt
1    tsp dried basil
Dice the shallots and saute in a small amount of olive oil until they are carmelized.

Add shallots to cup you will use in hand blender.

Add the olive oil, basalmic vinegar, red wine vinegar, salt and basil and blend until a creamy consistency. If dressing is too think for tossing with your salad, you can mix small amounts by hand with additional olive oil until it is the desired consistency.

Serve over salad greens of your choice (or spinach) and sprinkle shaved parmesan or romano cheese.
