Parmatzo Chicken - Parmesan Matzo Crusted Chicken

The chicken in this recipe is coated in grated parmesan cheese, matzo meal, and lots of spices, covered with minced garlic, and baked.

3lbs    Bonless Skinless Chicken Breast
1 cup   Matzo Meal (Matzo chopped to powder in food processor)
1/2 cup Fresh grated parmesan and romano blend
2 tsp   Black pepper
1 tsp   Cayenne pepper
2 tsp   Garlic powder
1 tbsp  Italian herb seasoning blend
4 clove Garlic minced
1 tbsp  Olive oil
2       eggs

(serves 6)

Mix the matzo meal, grated parmesan cheese, black pepper, cayenne pepper, garlic powder, and itialian seasing blend. In a separate bowl beat the eggs. Cut the chicken breast to the desired serving size. Drizzle the olive oil in the bottom of a casserole dish.

For each piece of chicken, coat in the beaten eggs then dredge in the matzo, parmesan, spice mixture, then place in the casserole dish. When done with all pieces, pour the rest of the egg mixture over the chiken, and lightly sprinkle more of the matzo, paemesan, spice mixture if any remains. Sprinkle the minced garlic on top. Bake in a 375 degree (Fahrenheit) oven for 50 minutes.
