Curry Shallot Chile Sauce

This sauce can be used as a condiment on noodles, hot dogs, or just about anything. It is very spicy, but has a distinct flavor. The recipe started from a list of ingredients, but no quantities, for another sauce. What I ended up with was not like the original, but still very good. This is what I ended up with.

Ingredients:

   1   cup   Sriracha Hot Chili Sauce (sometimes called rooster sauce)
   1   tbsp  olive oil
   2   tbsp  peanut oil
   1   tbsp  sesame oil
   1.5 cups  peeled and chopped shallots
   2   tbsp  curry powder

Peel and chop the shallots, saute in olive oil until soft and slightly brown.

Add the chili sauce, peanut oil, sesame oil and curry powder, and bring to a simmer. Simmer covered for 20 minutes or until the desired consistency.

Use as a condiment.
