Bacon Blue Pork Chops

These pork chops are stuffed with blue chees and wrapped in bacon. I like to call them Back'n Blue Pork Chops.

Ingredients :



Filling:

1 tbsp   Olive Oil
4 stalk  Green Onion - Chopped
2 tsp    dried rosemary
1 tsp    red pepper flakes
1/2 cup  blue cheese (a soft variety)

Meat:

4 large boneless pork chops (large enough to slice in half - do not slice yet)
8 slices think sliced bacon (I suggest Farmer John's or another
                             high quality brand)

Instructions

Saute the green onion and dried rosemary in a non-stick pan using the oilve oil until soft, remove frm heat and mix in crumbled blue cheese.

Meanwhile, slice an opening parallel to the surface of each of the pork chops without cutting all the way through. This will be used to hold the stuffing. Fill this pocket with the filling

Using the same pan, partially cook the bacon strips until they start to turn brown, then remove from heat, let cool briefly to a temperature where you can work with them, then wrap each pork chop with two of the slices of bacon and secure with a tooth pick.

Pour off most of the bacon fat, leaving about 1 tablespoon in the pan, add 2 talespoons olive oil, and cook the prepared pork chops, cooking for 9 to 11 minutes or until done.
