Ingredients:1 cup butter or margarine (left at room temperature for 1 hour) 1 cup firmly packed brown sugar 1/2 cup granulated (standard white table) sugar 2 eggs 1 teaspoon real vanilla extract 1-1/2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon Cinnamon (optional) 3 cups quick or old-fashioned oats, uncooked 12 ounces chocolate chips or rasins (optional)Pre-heat oven to 350 degrees F. With a mixer, beat the butter or margarine, and mix in the brown surgar and granulated sugar. Beat in the eggs and vanilla. Combine (sift together) flour, baking soda, and cinnamon; add to wet ingredients, mixing well with a spoon . Stir oats. (unless you have a heavy duty, high quality mixer, it will not be effective in mixing in the dry ingredients, and may be damaged). Drop rounded tablespoons full of the mixture onto a greased cookie sheet. Bake 8 to 12 minutes. Within this range, lower time for a chewie cooking, longer for a crisp cooking. Higher in the range if the cookies are larger. Remove from oven, cool one minute on cookie sheet, then move cookies to wire cooking rack. |
