Dried Corn

This recipe for Potato Salad is from Mary Eleanor Williams Bailey.

Ingredients:

2 eggs, beaten

Mix together: 
3/4 cup sugar
2 tbs flour
1 tsp salt
1/8 tsp dry mustard

Add dry mixture to beaten eggs. Add 1/2 cup each, water and vinegar. Cook slowly until thik stirring constantly. If you use a sauce pan, keep the heat fairly low.

Add 2 tsp butter and cool.

Dice potatoes, onion, celery, eggs. Amounts can can vary according to how much you want to make. Add 2 tsp celery seed. Don't mix until ready to serve.
