Pineapple Upside Down Cake

This recipe for Pineapple Upside Down Cake is from Barbara Gordon's Grandmother Williams.

3/4 cup brown sugar
4 tbs melted butter

Pineapple slices in bottom of pan
1/2 cup pineapple juice (add alternately with sugar mixture)

1/2 cup sugar
1/3 cup butter
1 egg yolk, well beaten
1 1/4 cup flour
2 1/2 tsp baking powder

1 egg white beaten (folded in)

Cook the brown sugar and butter on stove until it bubbles.
Add pineapple.slices to bottom of oven proof pan.
Alternate pouring pineapple juice with sugar mixture.
Mix the other ingredients separately and fold in the beaten egg white.
Pour this mixture into the pan over the pineapple and sugar layer.
Bake at 350 degrees F for approximately 45 minutes or until cake is done.
Let cool for 10 minutes
