Barbara Gordon's Onion Soup Recipe

This recipe for Onion Soup is from Barbara Gordon.


1/3 cup peanut oil (must be peanut)
6   cups thinly chopped onions
3   tablespoons flour
3   10+1/2 oz cans beef boulion (31.5 oz) and equal amounts of water
    French Bread sliced 1-1/2" thick
    Peanut oil
1   Clove split and peeled garlic
1+  cup grated swiss 
Saute onions in oil until golden. Stir in flour and cook stirring 2 or 3 minutes. Add soup and water. Bring to a boil and simmer 30 minutes

Meanwhile, arrange bread sloces on baking sheet and toast in 325 degree oven, 15 minutes. Brush bread on both sides with oil, turn and toast on other side, 15 minutes. Rub each slice with garlic cloves.

Transfer soup to individual oven proof bowls Top with toast and cheese.

Bake at 375 degrees for 10 minutes or until chees is bubbly and lightly browned.

Serves 6.
